Attikié Sushi
Ingrédients for 4 persons
• 1 pack of nori leaf
• 1 grapefruit
• 3 avocados
• 1 salmon filet
• Olive Oil
• Sweet and savory soya
• Honey
• Ginger
• Wasabi sesame
• Lemon
• Capers
Preparation for the sushi
  1. Cut the salmon into thin slice
  2. Cut the avocado into thin lamella
  3. Heat the attiéké into the microwaves to activate the starch, then season it with olive oil and sweat soya to reduce the acidity
  4. After all this, the sushi making is in 2 ways
    – Nori leaf, warm attiéké, salmon, avocado
    – Food film, attiéké, Nori leaf, salmon, avocado, roll then sprinkle
Realization of the avocado purée
  1. Mix the avocado with lemon and olive oil the season with salt and pepper
Sauce for sushi
  1. Sweet / savory soy, ginger and honey
  2. Prepare the grapefruit quarters for the dressing

NB: Prepare the sushi just before eating and do not keep it in the fridge otherwise the attiéké hardened.
